Thai Chicken with Peanut Garlic Sauce

1. In large skillet over medium heat, saute rice-vermicelli mix and garlic with margarine until vemicelli is golden brown.

2. Slowly stir in 2 1/2 cups water, Special Seasonings, honey, peanut butter, soy sauce, and crushed pepper; bring to a boil. Reduce heat to low. Cover; simmer 15 minutes or until liquid is absorbed and rice is tender.

3. Stir in chicken, carrots and cucumber; let stand 5 minutes. Sprinkle with sliced green onions before serving.
