In a saucepan, whisk together milk, pumpkin and sugar; cook over medium heat, stirring until mixture is steaming.
Remove from heat; stir in vanilla extract and pumpkin pie spice. Using an immersion blender (stick blender), process for 15 seconds until frothy.
Pour coffee into one or two mugs. Fill with steaming pumpkin mixture. Sprinkle pumpkin pie spice over top and serve.
